Mix a couple Tbsp of sugar and cinnamon together in a shallow plate. Set aside.
In a jar with a wooden spoon or with a mortar and pestle, smash together the apples and ginger. If using the mortar and pestle, transfer to a jar after this step. Add the rest of the ingredients save for the rim and garnish. Shake shake shake!
Gently wet the rim of a glass with water or a wedge of lime. Dip into the sugar/cinnamon mixture. Transfer the contents of jar to the glass and garnish with an apple chip and/or wedge of lime.
