Balsamic Roasted Vegetables

Instructions

  1. Pre-heat your oven to 450 degrees F. As it heats, toss all the veg and herbs into a shallow roasting pan (or two) with a good drizzle of olive oil and a generous helping of salt and pepper. Drench in balsamic and stir well to coat. Arrange so veg is in a single layer in the pan(s).
  2. Place in hot oven and roast for 20 - 30 min or until veggies are fork tender and the balsamic has reduced to a thick coating, shaking the pan every 10 minutes.
  3. Remove from the oven and dispose of thyme sprigs.
  4. Eat.
