Burger toppings of your choice (I like kale, sprouts, sauteed mushrooms, avocado, mustard and pickles!).
Instructions
Pre-heat your oven to 400 degrees F and lightly grease a baking sheet. Set aside.
In a medium bowl, smash black beans. I usually start with my hands to get them going and then finish them with a fork. Get em good and pasty.
Chuck the pepper, onion, and garlic into a food processor and pulse until finely chopped. This only takes a few seconds. Don't pulverize them too long though or you'll end up with a liquidy mess. Stir into mashed beans.
In a small bowl, whisk together egg, chili powder, cumin, and sriracha. Dump into mashed bean/veggie mixture and combine well.
Mix in bread crumbs until the mixture is sticky and holds together. You may or may not need to add another 1/4 C of breadcrumbs depending on the water content of your veggies.
Divide mixture into six portions. Careful not to man-handle them too much, roll/shape into balls in the palm of your hand and squish into patties - if you play with them too much they won't stick together.
Place on the baking sheet and bake in the oven about 12 minutes - gently flip - and bake 12 minutes more.
Remove from the oven and serve with whatever toppings you prefer.
Eat.
